Fresh parsley, garlic and red wine vinegar for fire-cooked steak rolls. This is Daniel’s steak-roll version.

Ingredients

  • 1 cup parsley, finely chopped
  • 2–3 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • ½ cup olive oil
  • Chilli flakes, optional
  • Salt and black pepper

Method

  1. Combine the chopped parsley, garlic and red wine vinegar. Stir in the olive oil and season with salt and pepper.
  2. Rest for 10–15 minutes. Taste and adjust the acidity before serving. Add chilli flakes to the adult portion if desired.

Kitchen notes

For the fire-pit chicken version, use 3 tbsp red wine vinegar plus 1 tbsp lemon juice, 1 tsp dried oregano, ½ tsp salt and ¼ tsp pepper with 1 packed cup parsley, 3 garlic cloves and ½ cup olive oil.
