A hearty mince, potato and egg breakfast inspired by the family cooking photographs.

Ingredients

  • 500 g beef mince
  • 500 g potatoes, diced small
  • 1 diced onion
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • 4 eggs
  • 80 g grated cheese
  • Salt and pepper
  • Parsley

Method

  1. Parboil potatoes for 5 minutes, drain and dry.
  2. Soften onion in oil, add mince and brown thoroughly. Stir in paprika and garlic. Remove from pan.
  3. Fry potatoes until golden and tender, adding a little oil if needed.
  4. Return mince, season and make four spaces. Add eggs and cheese.
  5. Cover over low heat until eggs are set and filling is hot throughout. Finish with parsley.
