Written to complete the family collection. This is a new version, not a recovered record of the original cook.

Ingredients

  • 800 g sweet potatoes
  • 1 tbsp cornflour
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¾ tsp salt

Method

  1. Heat oven to 210°C fan-forced. Line two large trays.
  2. Cut sweet potatoes into even 1 cm sticks and pat dry.
  3. Toss first with cornflour, then oil, paprika and garlic. Spread widely across the trays.
  4. Bake for 25–35 minutes, turning halfway and swapping trays, until browned at the edges and tender.
  5. Season with salt after cooking. Serve immediately.

Kitchen notes

Sweet potato fries are softer than deep-fried potato chips; spacing them out helps the edges crisp.
