New cookbook version · Makes 8

Written to complete the family collection. This is a new version, not a recovered record of the original cook.

Ingredients

  • 500 g strong white flour
  • 7 g instant yeast
  • 25 g sugar
  • 9 g salt
  • 250 ml lukewarm milk
  • 1 egg
  • 40 g softened butter
  • 1 beaten egg for glazing
  • Sesame seeds, optional

Method

  1. Mix flour, yeast and sugar. Add milk, egg and salt and knead for 5 minutes.
  2. Knead in softened butter gradually, then knead 5–8 minutes more until smooth and elastic.
  3. Cover and leave until doubled, about 1–1½ hours.
  4. Divide into eight balls, shape tightly and place on a lined tray with room to rise. Cover for 45–60 minutes until puffy.
  5. Brush gently with beaten egg and add sesame if using. Bake at 180°C fan-forced for 18–22 minutes until golden and cooked through.
  6. Cool on a rack before slicing.
